Texas Hill Country is the largest of Texas's established AVAs, designated in 1991 under 27 CFR Part 9 and encompassing parts of more than two dozen counties in the limestone plateau west of Austin. The region is the commercial center of Texas winemaking activity and generates the majority of COLA label filings from the state. Tempranillo, Viognier, and Cabernet Sauvignon are among the most frequently filed varieties.
